Tell a complete stranger about a beloved family tradition.
We start early, usually around 5:00 am or 6:00 and continue through the day. It’s a way to make sure the meat is soft, tasted and well seasoned.
It’s pork, but we call it peril and it needs time to cook well.
We make it only for certain holidays; Thanksgiving and Christmas being the big ones, but only one or the other; never both.
Then, we eat!
